1/4 cup orange juice
1/4 cup vinegar
1/4 cup sherry
1/4 cup sugar
1 wild duck[boil until tender]
1/2 Tbs grated orange rind
4 Tbs butter
4 Tbs cornflour
1 cup chicken stock
2 Tbs soya sauce
MELT BUTTER,STIR IN CORNFLOUR THEN GRADUALLY ADD LIQUIDS[JUICE,VINEGAR SHERRY,SOYA SAUCE AND CHICKEN STOCK MIXED TOGETHER].ADJUST LIQUID TO MAKE THIN SAUCE. ADD SUGAR,RIND,SALT AND PEPPER TO YOUR TASTE.
SHRED DUCK INTO BITE SIZE PIECES AND ADD TO SAUCE.
